FOOD | Haitian Style Barbecued Goat's Meat
As a Chef I love to barbecue meats and grill fish. One of my favorite meat to BBQ in the summer is goat meat. Goat's meat is a staple in Caribbean cuisine. However, depending on what island you're located, it is mostly curried or stewed.
Goat meat has a unique flavor that is further enhanced by the smoke from the coals when grilled or BBQed. The following is my recipe for Haitan Style BBQ Goat Meat. I hope you enjoy it.
Haitian style Barbecue Goat meat Recipe
INGREDIENTS
5 lbs Goat Meat (leg of Goat cut in 2 inch squares)
2 tsp salt
3 tsp Black Pepper
2 large onions
3 cloves of Garlic
2 sprigs of Thyme
1/2 lb scallion
2large limes
Bamboo Skewers (soaked in water for 4 hours)
PREPARATION
Wash goat meat with limes.
Combine all the seasonings and marinate meat overnight in fridge.
Steam goat meat with marinade until tender. Allow to cool. Remove all the bones from the meat.
Light the charcoal grill.
Using soaked bamboo skewers, thread the meat on the skewers and put on them over smoking coals. Do not allow meat to burn.
Add Homemade BBQ sauce.
Continue to grill and add sauce for about 10 minutes.
Homemade BBQ Sauce Recipe
INGREDIENTS
I bottle Ketchup
1/2 cup Apple cider vinegar
1/4 -1/2 cup dark brown sugar
2 tsp cumin
1 cup water
2 tsp garlic powder
2 tsp onion powder
METHOD
Combine all ingredients.
Simmer for 10-15 minutes on the stove.
Add sauce on BBQ Goat meat while on the grill until meat is finished grilling.
Serve with rice and peas or Haitan Black rice and steam vegetables.
